Is it a fruit or vegetable? Although technically it is a fruit, as it doesn't have the sweet quality of fruit it is often classified as a vegetable. Rich in minerals and Vitamin C.
A warming simple dish!
Potatoes with Sage and Tomatoes
* 2 tbsp olive oil
* 1 medium onion, peeled and sliced
* 1 tbsp fresh sage leaves, torn into pieces
* 1 kg potatoes, skins on and sliced
* 450 g tomatoes
* 160 ml dry white wine
* 120 ml vegetable stock
* 1/2 cup freshly grated Parmesan cheese
* Salt and pepper to taste
Heat the olive oil in a saucepan and sauté the onions with the sage until the onion becomes tender. Add the potatoes and toss with the onions for 1 minute, then add the tomatoes, wine, stock and bring to a simmer. Cover and cook slowly over a low flame for 1 hour, or until the potatoes are tender. Stir occasionally. Season with the salt and pepper and add the Parmesan. Remove from the heat and serve.
